A sweet and flaky Australian Sea Bass, seasoned with house spice, homemade green chimichurri, lemon & scallion, wrapped in banana leaves, then grilled to perfection. Served with arroz verde, a side of fresh salsa and sautéed zucchini & squash.
A tender, pounded chicken breast, roasted with a Catalan sauce called Picada, a luscious blend of almonds, herbs, garlic, lemon and a secret ingredient you wouldn’t know was there…chocolate! Topped with roasted tomato and fried capers. Served with arroz verde, organic wilted spinach and butter beans.
A savory dish from the country of Peru made using Beelers, free range, Heluka Pork. We marinate the pork shoulder in a mix of garlic and Peruvian spices then wrap it in banana leaves and braise for several hours, till it’s succulent and juicy. Served pulled in a bowl with arroz verde, escabeche (pickled vegetables), sauteed squash corn tortillas, aji amarillo hot sauce and your choice of beans.
A 10-12 oz. cut of Dry Aged Angus Striploin, seasoned with our house rub, then grilled to perfection. Topped with a compound ancho chile butter and plated with our homemade red bell pepper steak sauce on the side. Served with arroz verde, organic wilted spinach and your choice of beans.
A 12-14 oz steak dry aged in-house at Spearfish’s premiere specialty foods purveyor, Prairie Harvest. It is seasoned with our house rub, grilled to perfection, then topped with our saffron compound butter and pan-fried shallots. Served with organic wilted spinach, arroz verde and your choice of beans.
A succulent, 12-14 oz. chop with flavors inspired by the dish “Cochinita Pibil” (roasted in the ground) from the Yucatán peninsula in South America. The achiote berry in the marinade, stains the chop a brilliant red color. Grilled to perfection and served with escabeche (pickled vegetables), salsa fresca, sautéed squash and zucchini, arroz verde and your choice of beans.

Taco Entrées
A very deep and richly flavored beef, slow-braised with chilies, spices, herbs and cocoa. Piled on two warm corn tortillas and topped with homemade crema, fresh diced tomato, fresh chopped lettuce, homemade green hot sauce, cilantro and onion.
Our black beans are mixed on the griddle with chili-spiced sweet potatoes and piled on two warm corn tortillas. Topped with homemade crema, fresh chopped lettuce, salsa verde and crispy pan-fried shallots.
Mahi Mahi seasoned with house rub then blackened to perfection. Piled on two warm corn tortillas then topped with fresh squeezed lime juice, our homemade aji amarillo mayo, cabbage slaw, pineapple, cilantro and aji amarillo hot sauce.
A half-pound of seasoned and marinated buffalo skirt steak, grilled to order with fresh green onion. We then chop up the carne asada with the green onions and serve street style as three tacos topped with fresh onion, cilantro, jalapeños and lime juice. Served with sides of regular crema and esada salsa.
