Grilled Yucatán Bone-In Heluka Pork Chop

A succulent, 12-14 oz. chop with flavors inspired by the dish “Cochinita Pibil” (roasted in the ground) from the Yucatán peninsula in South America. The achiote berry in the marinade, stains the chop a brilliant red color.
